Fruitful Harvest Granola Muffins

Our multigrain, multi-fruit granola is a great addition to these tasty, healthy muffins.

 

1 c. all-purpose flour
¾ c. white whole wheat flour (or whole wheat pastry flour)
½ c. sugar (preferably organic raw granulated sugar)
2 t. baking powder
1 t. baking soda
1 c. buttermilk
1 c. mashed banana
2 T. canola oil
1 lg. egg
1 c. plus ½ c. Fruitful Harvest Granola from Vermont Maple Granola Co.


Directions: Preheat oven to 375 degrees. Spray 12 regular muffin cups with non-stick cooking spray. Mix the dry ingredients (except granola) and wet ingredients separately, then combine and stir until just blended. Fold in 1 c. granola. Divide among muffin cups, then top each muffin with a sprinkle of remaining ½ c. granola. Bake about 15-20 min. or until toothpick inserted in center comes out clean.
