Woodstock Granola

Oatmeal Pancakes

These pancakes go beyond the ordinary ones made from a mix. Delicious with Vermont maple syrup.


Place the following in a food processor and puree until smooth:
1/2 c. flour
1/2 c. rolled oats
1/2 c. granola
1 T. maple sugar
1 tsp. baking powder
1/2 tsp. baking soda
1/2 tsp. salt
1 c. buttermilk
1 egg
2 T. canola oil
1/2 tsp. vanilla extract
Heat a lightly oiled pan over medium high heat. Ladle batter into pan, cook until tiny bubbles appear on top, flip pancake and finish cooking the other side.
