Woodstock Granola

Strawberry-Rhubarb Crunch

Celebrate spring with a fresh rhubarb dessert!

Combine in a large bowl:
1 c. white sugar
1 T. instant tapioca
1 T. cornstarch
1/8 tsp. salt
Add, tossing gently:
4 c. rhubarb, sliced
1 c. strawberries, sliced
Grease a 9"x13" baking pan and put fruit mixture in bottom.
In another bowl, mix dry ingredients and cut in butter:
1/2 c. brown sugar
1/2 c. flour
1/2 c. granola
1/2 c. butter, chilled
Spread crumb mixture over fruit mixture.
Bake in preheated 350 degree oven for 35-45 minutes until bubbly and brown.
